I decided to make these during a marathon baking day in early March – I was baking a making a bunch of things, and somehow in the middle of it all, I neglected to see that flour was an ingredient. I know. It’s listed in the ingredients, it’s referred to in the instructions, and yet somehow I completely and totally overlooked it. Who does that??? So, what an utter surprise it was when I opened up the oven door and instead of pretty little cookies, I had a cookie sheet spread thin with what was basically melted butter and pulverized pecans…I should have taken a picture, it was really something. Gooooood heavens.
SO. Take two. WITH flour. These are light and crumbly and remind me very much of Mexican Wedding Cakes, but even lighter. And they are sort of addictive, so off to work they will go tomorrow!

Oh man, I feel bad about the flour! I did something like that just a couple weeks ago, left the sugar out of my pie filling. Happens to all of us I think! Your second version looks absolutely perfect though and so yummy!

I’m sure we could all write a book about kitchen antics…These pecan powder puffs look delicate and delicious! Pecans are a favourite of mine and you’ve given me inspiration to try again – some of my favourite recipes using them! x
I loved these! I took them to work and they were gone very quickly. I used almonds and that was really nice.
