Pesto Presto

What a hokey post title. Anyhoo.

More garlic scapes from my CSA this week, and some left over from last week – what better to do than to make pesto! I took a look at some recipes and really just sort of winged it a bit. Those garlic scapes sure do have a bite to them, so I might beef up the basil or the cheese next time, but it is good (and freeze-able!) nonetheless!

I took about a half cup of chopped garlic scapes, a half cup of packed fresh basil, 2 tsps of toasted pine nuts, and about a half cup of grated parmesan cheese and dumped it all right in the food processor.

Gave it a couple whizzes to mince it all up, add a few squeezes of fresh lemon juice, some salt and pepper, and then turned it back on. While it was running, I drizzled in olive oil until it reached the consistency I was looking for. Voila! All pretty and green and fresh.
