Don’t get me wrong, I actually think spinach salad can be very pretty. And equally as delicious and easy, which makes it perfect for a last minute dinner or for entertaining. In rummaging through recipes for dressing, I came across a great and easy idea to fancy up the simple salad.
Pecan Coated Goat Cheese
½ cup or so of chopped pecans, lightly toasted
Goat cheese (chevre) – in the log form
Preheat oven to 350. Slice off pieces of goat cheese and form into flattened disks using your hands. Coat both sides of the cheese in pecans, place on foil and pop in the oven for 5 – 7 minutes.
