Thank goodness for TWD – I have just not been finding any time to bake lately, and doing this sort of forces me to set aside a few hours and do what I love to do. Many thanks to Heather of Sherry Trifle – if I was going to make one thing this week, this was a super choice!
I stuck to the recipe nearly exactly, with the exception – as I saw other folks ran into as well – of the omission of the stem ginger. I know you can order it from The Ginger People but I just didn’t do it in time. Next round, definitely. I also sprinkled a little chopped chocolate on top just to finish it off. I’ve typically been skeptical of the whole ginger/chocolate combo – but I actually really liked this (especially with some whipped cream!). My test kitchen (aka my office) devoured it by lunchtime.
